Instructions
1Prepare the Dates
5m
Pit the Dates
Remove the pits from the dates. If the dates have a small stem or top, remove that as well.
Arrange Dates
Line a baking sheet with parchment paper. Arrange the pitted dates on the parchment paper, pressing them together to form a single layer.
2Prepare the Peanut Butter
5m
Warm Peanut Butter
Place about 1/4 cup of creamy peanut butter in a microwave-safe bowl. Microwave for 30 seconds, or until pourable.
Drizzle Peanut Butter
Drizzle the warmed peanut butter over the dates in a zig-zag pattern.
3Prepare the Toppings
5m
Chop Peanuts
Coarsely chop about 1/4 cup of roasted peanuts. You want larger pieces for texture.
Melt Chocolate
Melt 1 cup of chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth and pourable. You can add a teaspoon of coconut oil to help with fluidity if needed.
4Assemble the Bark
5m
Add Peanuts
Sprinkle the chopped peanuts evenly over the peanut butter layer.
Add Chocolate
Pour the melted chocolate over the entire bark, ensuring it covers the dates, peanut butter, and peanuts. Use a spatula to spread it evenly.
Add Salt
Sprinkle a pinch of flaky sea salt over the chocolate layer, if desired.
5Chill and Serve
30m
Chill the Bark
Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is firm.
Cut into Bars
Once firm, lift the parchment paper off the baking sheet. Cut the bark into desired bar shapes or break it into pieces.
Tips
Use soft, pliable dates like Medjool for the best texture and sweetness.
If your dates are a bit dry, you can briefly soak them in warm water and then pat them dry.
For a saltier kick, sprinkle flaky sea salt over the chocolate layer before it sets.
The bark can be stored in an airtight container in the refrigerator for up to a week.
