Instructions

1Cook the Broken Rice1h 10m
Soak Rice
Rinse the broken rice and soak it in water for 1 hour.
Drain and Add Water
Drain the rice and add about 1 cup of water, or just enough to be slightly above the rice level.
Cook Rice
Cook the rice in a rice cooker on the normal setting.
2Marinate the Pork Chops20m
Prepare Marinade
In a bowl, combine minced lemongrass, minced garlic, fish sauce, soy sauce, sugar, black pepper, vegetable oil, and chopped spring onion.
Marinate Pork
Add the pork chops to the marinade and coat them evenly on both sides. Marinate for at least 2 hours, or preferably overnight in the refrigerator.
3Grill the Pork Chops30m
Preheat Oven
Preheat your oven to 190°C (375°F).
First Grill
Place the marinated pork chops on a baking sheet lined with aluminum foil. Grill for 15 minutes on the middle rack.
Second Grill
Flip the pork chops and grill for another 15 minutes, or until cooked through and slightly caramelized. Adjust time based on thickness to avoid drying out.
4Fry the Eggs5m
Heat Pan
Heat 1 tablespoon of vegetable oil in a flat non-stick pan over medium heat.
Shape Egg
Place a heart-shaped mold in the pan. Crack an egg into the mold. You can poke small holes in the egg white to help it cook evenly.
Cook Egg
Fry the egg until the white is set and the yolk is still runny. Carefully remove the mold.
5Assemble the Dish5m
Plate Rice
Unmold the cooked broken rice onto a plate, shaping it nicely.
Add Garnishes
Arrange tomato and cucumber slices around the rice.
Add Pork and Egg
Place the grilled pork chop and the fried egg onto the plate.
Add Sauce
Drizzle with fish sauce if desired.

Tips

Soaking the rice helps to break it down and achieve the characteristic texture of broken rice.
Marinating the pork overnight will result in a deeper flavor.
Avoid overcooking the pork chops to keep them tender and juicy.
Using a flat pan and a mold helps create a perfectly shaped sunny-side-up egg.
