Instructions
1Prepare the Tempeh 'Bacon'
5m
Chop Tempeh
Cut the tempeh into small, bite-sized pieces, aiming for a similar size to bacon bits. This maximizes surface area for flavor absorption and crispiness.
Marinate Tempeh
In a bowl, combine the chopped tempeh with tamari, maple syrup, olive oil, smoked paprika, and garlic powder. Mix well to ensure all pieces are coated.
2Prepare the Croutons
5m
Chop Bread
Cut the sourdough bread slices into small, crouton-sized cubes.
Season Croutons
Place the bread cubes in a bowl, drizzle with olive oil, sprinkle with Italian herbs and a pinch of salt. Toss gently to coat.
3Cook Tempeh and Croutons
15m
Air Fry Tempeh
Place the marinated tempeh in the air fryer basket. Air fry for 6-8 minutes at 200°C (392°F), or until crispy and golden brown.
Air Fry Croutons
While the tempeh cooks, place the seasoned bread cubes in the air fryer basket (you may need to do this in batches). Air fry for 2-4 minutes at 200°C (392°F), or until golden and crispy. Watch closely to prevent burning.
Cool Cooked Items
Once cooked, remove the tempeh and croutons from the air fryer and let them cool slightly.
4Prepare the Dressing
5m
Combine Dressing Ingredients
In a small bowl, combine tahini, soya yoghurt, and caper brine. Season with salt and pepper to taste.
Whisk Dressing
Whisk the ingredients together until smooth and creamy. Adjust seasoning if necessary.
5Assemble the Salad
5m
Prepare Greens
Wash and chop the kale, removing the tough central stems. Rip the baby gem lettuce leaves into bite-sized pieces.
Combine Greens
Place the prepared kale and baby gem lettuce into a large salad bowl.
Dress the Salad
Pour the prepared dressing over the greens. Add about half of the capers and toss gently to coat every leaf evenly.
Add Toppings
Top the dressed salad with the crispy tempeh 'bacon' and croutons. Scatter the remaining capers over the top for an extra burst of flavor.
Tips
For best results, ensure your tempeh and croutons are cooled slightly before adding to the salad to prevent wilting the greens.
If you don't have an air fryer, you can bake the tempeh and croutons in a preheated oven at 200°C (392°F) until golden and crisp.
Adjust the amount of caper brine in the dressing to control the saltiness and tanginess.
