Instructions

1Prepare the Chickpeas10m
Peel Chickpeas
Add 400g canned chickpeas to a large bowl and rub them to remove the skins.
Rinse Skins
Fill the bowl with water. The skins will float to the top. Drain the water, and the skins will group together, making them easier to collect and discard.
2Make the Hummus Base15m
Combine Ingredients
Add the peeled chickpeas, 2 cloves of garlic, half a teaspoon of salt, 6 tablespoons of tahini, and 2 tablespoons of extra virgin olive oil to a food processor.
Add Lemon Juice
Squeeze the juice of one lemon into the food processor.
Process Hummus
Run the food processor on low-medium speed for 7-8 minutes. The hummus will start to warm up.
Add Ice Gradually
While the food processor is running, gradually add 6 cubes of ice. This helps to cool the mixture and contributes to a smoother texture.
Continue Processing
Continue processing for a few more minutes until the hummus is creamy and smooth. You can increase the speed to high at this stage if needed.
3Adjust and Rest
Taste and Adjust
Taste the hummus and adjust the lemon juice, tahini, and salt according to your preference. The flavors of garlic and olive oil will improve after settling.
Rest Flavors
For the best flavor, let the hummus rest for 2-3 hours before serving to allow the flavors to meld and deepen.
4Serve and Garnish5m
Plate Hummus
Transfer the hummus to a serving dish. Create a small crater in the center with the back of a spoon.
Add Garnish
Sprinkle ground sumac, cumin, and chopped parsley leaves over the hummus.
Drizzle Olive Oil
Finish by drizzling 2-3 tablespoons of extra virgin olive oil over the top.

Tips

Peeling the chickpeas is crucial for achieving a silky smooth hummus texture.
Adding ice cubes not only cools the hummus but also helps to create a lighter, creamier consistency.
Allowing the hummus to rest for a few hours before serving significantly enhances the depth of flavor.
Adjust the lemon, tahini, and salt to your personal taste preference; the ratios are a guideline.
