Instructions

1Prepare the Chicken15m
Combine Marinade
In a bowl, whisk together lime juice, olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
Marinate Chicken
Add chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
2Cook the Rice20m
Rinse Rice
Rinse the white rice under cold water until the water runs clear.
Boil Rice
In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat.
Simmer Rice
Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and rice is tender.
Rest Rice
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
3Cook the Chicken20m
Sear Chicken
Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken breasts and cook for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
Rest and Slice
Remove chicken from the pan and let it rest for 5-10 minutes before slicing or dicing.
4Prepare the Beans5m
Season Beans
In a small bowl, combine the rinsed and drained black beans with lime juice, cumin, and salt. Stir to combine.
5Assemble the Bowls5m
Layer Ingredients
Divide the cooked rice among four bowls. Top with the cooked chicken, seasoned black beans, corn, red onion, cilantro, and avocado.
Add Toppings
Serve with salsa, sour cream (or Greek yogurt), and lime wedges on the side.

Tips

For an even healthier bowl, use brown rice instead of white rice.
If you don't have fresh limes, bottled lime juice can be used, but fresh is recommended for best flavor.
This bowl is excellent for meal prep; store components separately and assemble just before serving to prevent sogginess.
