5m
Soak Noodles
Soak the glass noodles in room temperature water for 5 minutes until pliable but not completely softened.
Toast and Grind Rice
Toast the raw glutinous rice in a dry frying pan over high heat until golden brown. Remove from heat and grind to a fine powder using a mortar and pestle or spice grinder.

Season Salmon
Season the salmon fillets with sea salt.
Sear Salmon
Heat a frying pan over high heat. Add vegetable oil, then add the salmon fillets. Cook for 2-3 minutes per side, or until cooked to your liking. Transfer to a plate to rest until cool enough to handle.
3Assemble Salad
5m
Cook Noodles
Cook the soaked glass noodles in boiling water for 2 minutes until just soft and tender. Drain well.
Combine Ingredients
Place the cooked noodles in a large bowl. Add the Asian shallots, flaked salmon, chopped coriander, sliced spring onion, and mint leaves.
Dress and Serve
Add the prepared dressing to the bowl and toss gently to combine. Sprinkle with extra chilli powder, if desired, and serve immediately.
Tips
Using glutinous rice for the dressing powder creates a softer coating; regular rice will yield a slightly crunchier texture.
Control the chilli powder amount to adjust the spice level to your preference.
