Instructions

1Prepare the Salmon5m
Preheat Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Marinade
In a small bowl, whisk together soy sauce, orange juice, sesame oil, chili crisp, grated ginger, minced garlic, and chopped scallions.
Marinate Salmon
Place the salmon fillets, skin-side down, on the prepared baking sheet. Spoon the marinade generously over the top of each fillet.
Toast Sesame Seeds
In a dry skillet over medium heat, toast the sesame seeds until golden brown and fragrant, about 2-3 minutes. Set aside.
2Cook the Salmon10m
Broil Salmon
Place the baking sheet with the salmon under the broiler. Broil for 8-12 minutes, or until the salmon is cooked through and the topping is caramelized and slightly charred. Cooking time will vary depending on the thickness of the fillets.
3Prepare the Rice5m
Sauté Aromatics
Heat olive oil in a skillet over medium heat. Add chopped scallions, grated ginger, and minced garlic. Sauté until fragrant, about 1-2 minutes.
Add Rice
Add the cooked rice to the skillet. Stir in sesame oil and mix well to combine with the aromatics.
Toast Rice
Continue to stir-fry the rice for 3-5 minutes, allowing it to heat through and toast slightly.
4Prepare the Salad5m
Chop Vegetables
Dice the cucumber and watermelon radish into bite-sized pieces. Chop the cilantro.
Dress Salad
In a bowl, combine the chopped cucumber, watermelon radish, and cilantro. Drizzle with lime juice and olive oil. Season with salt and pepper to taste. Toss gently to combine.
5Assemble the Bowls5m
Base of Rice
Spoon a generous portion of the ginger-scallion rice into each serving bowl.
Add Salad and Kimchi
Top the rice with a portion of the cucumber and watermelon radish salad, and a serving of kimchi.
Top with Salmon
Place a piece of the broiled soy-glazed salmon on top of the rice and salad.
Garnish and Serve
Sprinkle toasted sesame seeds over the salmon and drizzle with any remaining sauce from the baking sheet. Serve immediately.

Tips

For extra flavor, you can marinate the salmon in the soy glaze for 15-30 minutes before broiling.
Ensure your oven broiler is preheated to high for best results when broiling the salmon.
Day-old rice works best for fried rice as it is drier and less likely to clump.
Taste and adjust seasoning for the salad and salmon glaze as needed before serving.
