Instructions
1Prepare the Vegetables
10m
Drain Tomatoes
Place diced Roma tomatoes in a colander for a few minutes to release excess liquid. This step helps to prevent a watery salad.
Combine Vegetables
In a large bowl, combine the diced tomatoes, diced English cucumber, finely chopped onions, and optional chopped green bell pepper.
2Add Flavorings
3m
Add Herbs and Seasonings
Add the chopped fresh parsley, cilantro, dill, dried mint, salt, pepper, and sumac (if using) to the bowl with the vegetables.
3Dress and Chill
2m
Dress the Salad
Add the lime juice and extra virgin olive oil directly to the bowl. Toss gently to combine all ingredients.
Chill for Flavor
For best flavor, cover the salad and chill in the refrigerator for at least 30 minutes, or up to 1 hour, to allow the flavors to meld.
Tips
Dice the vegetables very small for better texture and flavor absorption.
For a crunchier salad, dress it just before serving. For a more marinated flavor, dress it ahead and chill.
Sumac is optional but highly recommended for its unique tangy flavor.
