Instructions

1Prepare the Ceviche Base15m
Dice Vegetables
Dice the roma tomatoes, cucumber, white onion, green onion, cilantro, and jalapeno pepper.
Mince Garlic
Mince the garlic cloves.
Combine Vegetables
In a non-reactive bowl (glass or ceramic), combine the diced tomatoes, cucumber, white onion, green onion, cilantro, jalapeno, and minced garlic.
2Marinate the Shrimp5m
Prepare Shrimp
Ensure shrimp are peeled, deveined, and roughly chopped into bite-sized pieces.
Add Lime Juice
Pour enough lime juice over the shrimp to completely submerge them. Reserve any extra lime juice.
Season Shrimp
Add salt, ground cumin, ground coriander, and ground jalapeno pepper to the shrimp and lime juice mixture.
Mix and Chill
Gently mix to combine. Cover the bowl with plastic wrap, pressing it down to remove air bubbles. Refrigerate for at least 1 hour, or until the shrimp are opaque and cooked through.
3Combine and Serve5m
Drain and Combine
Drain the shrimp, reserving the marinade. Add the marinated shrimp, garlic, and reserved marinade to the bowl with the vegetables.
Mix Gently
Gently fold all ingredients together to combine. Be careful not to overmix and break up the shrimp too much.
Taste and Adjust
Taste the ceviche and adjust seasoning with salt or additional jalapeno pepper if desired.
Serve
Serve immediately with tortilla chips or tostadas. For an extra kick, drizzle with some of the reserved lime juice mixture.

Tips

Use fresh, high-quality shrimp for the best flavor and texture.
Ensure the shrimp is fully submerged in lime juice to 'cook' properly.
The marinating time can vary; check the shrimp for doneness (opaque and firm) after about an hour.
For a spicier ceviche, add more jalapeno or a pinch of cayenne pepper.
Ceviche is best served fresh, but leftovers can be stored in the refrigerator for up to 24 hours.
