Instructions
1Marinate the Pork
30m
Prepare Marinade
In a bowl, whisk together smoked paprika, minced garlic, olive oil, white wine, salt, and pepper.
Marinate Pork
Thinly slice the pork loin. Add the pork slices to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
2Prepare Vegetables and Bread
15m
Chop Vegetables
Slice the red and green bell peppers, red onion, and chili pepper into thin strips. Finely chop the cilantro.
Slice Bread
Slice the ciabatta bread in half lengthwise. Lightly toast the cut sides on the grill until golden brown and slightly crispy.
Slice Cheese
Slice the sheep cheese into thin pieces.
3Cook the Vegetables
10m
Sauté Vegetables
Heat olive oil in a cast iron skillet over medium-high heat on the grill. Add the sliced peppers, onions, and chili peppers. Sauté until softened and slightly caramelized, about 5-7 minutes. Stir in the chopped cilantro and a squeeze of lemon juice. Season with salt and pepper.
4Grill the Pork
5m
Grill Pork
Remove pork from marinade, discarding excess. Grill the pork slices for about 90 seconds per side, until cooked through and nicely seared. Brush with a little of the smoked paprika oil during the last minute of cooking.
5Assemble the Sandwich
5m
Prepare Bread Base
Spread mustard evenly on both toasted halves of the ciabatta bread.
Layer Ingredients
On the bottom half of the bread, layer the sautéed peppers and onions, followed by the grilled pork slices. Top the pork with slices of sheep cheese.
Melt Cheese
Place the top half of the bread over the cheese. Place a pan on top of the sandwich to press it down. Grill for another 1-2 minutes, or until the cheese is melted and gooey.
Add Prosciutto and Arugula
Carefully remove the sandwich from the grill. Open it up and layer with crispy prosciutto and fresh arugula.
Close and Serve
Place the top half of the bread back on the sandwich. Slice in half and serve immediately.
Tips
Ensure the pork slices are thin for quick and even cooking.
Don't overcook the pork; it should remain tender.
Adjust the amount of chili pepper to your preferred level of spice.
The melted cheese is key to binding the sandwich together.
