Sauté Onions

Add Noodles
Add half a packet of noodles to the simmering soup. Stir gently and cook for another 15-20 minutes, or until noodles are cooked through.
Add Whey

4Prepare the Garnish10m
Fry Onions
In a separate small pan, heat the remaining oil over medium heat. Add the remaining chopped onion and fry until deeply golden brown and crispy.
Fry Mint

5Serve5m
Ladle into Bowls
Ladle the hot soup into serving bowls.
Garnish
Drizzle with the fried mint oil and top with the crispy fried onions. Optionally, add a swirl of plain yogurt.

Tips

For a richer flavor, you can soak the dried legumes overnight before cooking.
Adjust the amount of water to achieve your desired soup consistency.
If you don't have whey (kashk), you can omit it or use a plain yogurt for a similar tangy flavor.
The soup can be made ahead and reheated; the flavors often deepen overnight.
