1Prepare the Fruit
10m
Peel Tangerines
Carefully peel the tangerines, taking care not to damage the inner segments.
Prepare Strawberries
Wash the strawberries, remove the stems, and insert skewers into each one.
Skewer Fruit
Thread the prepared tangerine segments and strawberries onto skewers, alternating if desired.
2Make the Sugar Syrup
10m
Combine Ingredients
In a pot, combine the sugar and water.
Boil Syrup
Heat the mixture over medium heat, stirring until the sugar dissolves. Bring to a boil and continue to cook until the syrup thickens.
Reduce Heat
Once the syrup starts to boil thickly, reduce the heat to low.
Cook to Color
Continue to cook on low heat until the syrup turns a clear, pale golden color. Be careful not to burn it.
3Coat the Fruit
5m
Test Syrup
Drop a small amount of syrup into cold water to check if it hardens properly. It should form a brittle thread.
Coat Fruit
Quickly dip each fruit-laden skewer into the hot syrup, ensuring an even coating. Work fast to prevent the fruit from cooking.
Harden
Place the coated skewers on parchment paper or a silicone mat to allow the candy coating to harden completely.
Tips
Ensure your syrup reaches the correct pale golden color; too light and it won't harden, too dark and it will taste burnt.
Work quickly when coating the fruit, as the syrup hardens rapidly.
If the syrup hardens too much in the pot, you can gently reheat it over low heat.
