Instructions

1Make the Creole Butter10m
Combine Ingredients
In a small bowl, combine the softened unsalted butter, minced garlic, chopped parsley, chopped green onion, lemon juice, cajun seasoning, cayenne pepper, salt, and black pepper. Mix until well combined.
Chill Butter
Transfer the mixture to a piece of plastic wrap, form into a log, and wrap tightly. Refrigerate for at least 30 minutes, or until firm.
2Prepare the Roux45m
Heat Oil
In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium heat.
Add Flour
Gradually whisk in the all-purpose flour until smooth. Cook, stirring constantly, until the roux reaches a dark chocolate color, about 30-45 minutes. Be patient and do not rush this step, as burning the roux will ruin the gumbo.
3Build the Gumbo Base15m
Sauté Vegetables
Add the chopped yellow onion, celery, and green bell pepper to the Dutch oven. Cook, stirring occasionally, until softened, about 5-7 minutes.
Add Garlic and Seasonings
Stir in the minced garlic, bay leaves, dried thyme, creole seasoning, salt, and black pepper. Cook for 1 minute more until fragrant.
Add Broth
Slowly whisk in the chicken broth, ensuring there are no lumps from the roux. Bring the mixture to a simmer.
4Add Proteins and Simmer4h
Add Sausage and Chicken
Add the sliced andouille sausage and the bite-sized chicken thigh pieces to the pot. Stir to combine.
Simmer
Reduce the heat to low, cover, and let the gumbo simmer for at least 3-4 hours, stirring occasionally. The longer it simmers, the deeper the flavor.
Add Okra and Shrimp
During the last 30 minutes of simmering, stir in the sliced okra and the peeled and deveined shrimp. Cook until the shrimp are pink and cooked through.
Adjust Seasoning
Remove the bay leaves. Taste and adjust seasoning with salt and pepper if needed.
5Serve5m
Plate Gumbo
Ladle the gumbo over bowls of cooked white rice.
Garnish
Top each bowl with a dollop of reserved Creole butter, chopped fresh parsley, and chopped green onions.

Tips

The color of your roux is crucial for the flavor of your gumbo. Aim for a dark chocolate color, but be careful not to burn it.
Gumbo improves with time, so consider making it a day ahead for even better flavor.
If you don't have andouille sausage, any good quality smoked sausage can be substituted.
