Add Vegetables
Add the chopped Chinese chives and bean sprouts to the wok. Continue to stir-fry for another 1-2 minutes until the vegetables are just tender-crisp.
Serve
Serve the Char Kuey Teow hot. It can be enjoyed as is, or with a side of 'sambal belacan' for extra spice.
Tips
Ensure your wok is very hot before adding ingredients to achieve the characteristic smoky 'wok hei' flavor.
Don't overcrowd the wok; cook in batches if necessary to maintain high heat and proper stir-frying.
The key to good Char Kuey Teow is quick, high-heat cooking. Have all your ingredients prepped and ready before you start stir-frying.
