Form Dough Balls
Roll the dough into 1-inch balls. Place the balls onto a baking sheet lined with parchment paper, leaving about 2 inches between each cookie.
Flatten Cookies
Flatten each cookie ball with the tines of a fork, creating a criss-cross pattern. You can also use skewers and twist them for a different pattern.
Bake
Bake for approximately 10 minutes, or until the edges are lightly golden and the centers are still soft. The cookies will continue to set as they cool.
Cool Cookies
Allow the cookies to cool completely on the baking sheet for at least 10-15 minutes before transferring them to a wire rack. They need to set up before being moved.

Tips

For best results, use a smooth, salted peanut butter. If using unsalted, add the optional salt. If using natural peanut butter, ensure it's well-mixed to avoid runny cookies.
The cookies will seem very soft when they come out of the oven; this is normal. They will firm up as they cool due to residual heat.
If you want to make the dough ahead of time, it can be chilled for a few hours or overnight. The cookies will bake up just as nicely.
