Instructions
1Prepare the Octopus
30m
Thaw and Clean
If using frozen octopus, thaw it completely. Rinse the octopus under cold running water. Gently rub the suckers to remove any grit or slime. Turn the head inside out and rinse thoroughly. Remove the beak, which is located at the center of the tentacles.
Separate Tentacles
Using kitchen shears or a sharp knife, cut off the tentacles from the head, separating them at the base.
2Cook the Octopus Terrine
3h
Prepare Cooking Liquid
In a large pot, combine water, white wine vinegar, salt, and black pepper. Bring to a rolling boil.
Poach Octopus
Submerge the whole octopus (or large pieces) into the boiling liquid. Reduce heat to low, cover, and simmer gently for approximately 2.5 to 3 hours, or until the octopus is very tender. The cooking time will vary depending on the size of the octopus.
Chill and Press
Once tender, remove the octopus from the liquid and let it cool slightly. Place the octopus into a terrine mold or a rectangular container. Press it down firmly. Cover with plastic wrap, then place a weight on top (like a cutting board and cans). Refrigerate for at least 8 hours, or preferably overnight, to allow it to set.
3Prepare and Roast Octopus Tentacles
1h
Season Tentacles
In a baking dish, toss the octopus tentacles with olive oil, minced garlic, lemon juice, salt, and pepper. Ensure they are evenly coated.
Roast Tentacles
Roast in a preheated oven at 180°C (350°F) for about 45-60 minutes, or until the tentacles are golden brown, slightly crispy, and tender. Baste them with the pan juices halfway through cooking.
Rest and Slice
Remove the roasted tentacles from the oven and let them rest for 5-10 minutes. Slice them into bite-sized pieces.
4Make the Sauce
15m
Reduce Wine
In a small saucepan, combine the red wine and chili flakes. Bring to a simmer and reduce by about half, until slightly syrupy.
Incorporate Puree
Stir in the pumpkin puree and cook for another 2-3 minutes until the sauce is well combined and heated through. Season with salt if needed.
5Assemble and Serve
10m
Prepare Terrine Slice
Carefully unmold the octopus terrine and slice it into rounds using a meat slicer or a sharp knife. Place a slice on a serving plate.
Plate Roasted Tentacles
Arrange the sliced roasted octopus tentacles alongside the terrine slice. Spoon some of the reduced sauce over the tentacles.
Garnish
Garnish with fresh parsley, a drizzle of extra virgin olive oil, a few segments of orange, and thinly sliced green chili peppers.
Serve
Serve immediately and enjoy this exquisite octopus dish.
Tips
Freezing the octopus before cooking can help tenderize the meat by breaking down its muscle fibers.
Ensure the octopus is completely submerged in the poaching liquid for even cooking.
Don't over-reduce the sauce, as it can become too thick and overpowering.
The terrine can be made a day in advance, making it a great make-ahead dish for entertaining.
