Instructions
1Prepare the Aromatics
10m
Mince Shallots
Peel and finely mince the shallots.
Crush Garlic
Peel and crush the garlic cloves.
Chop Parsley
Finely chop the fresh parsley leaves.
Prepare Celery
Separate the celery leaves from the stalks. Chop the leaves.
Bundle Herbs
Tie the thyme, rosemary, and bay leaf together with kitchen twine to create a bouquet garni.
2Clean the Mussels
5m
Rinse Mussels
Rinse the mussels under cold running water in a colander or bowl. Scrub them gently to remove any dirt or barnacles.
Discard Bad Mussels
Discard any mussels that are broken or that remain open when lightly squeezed.
3Build the Flavor Base
5m
Melt Butter
In a large pot or Dutch oven, melt the butter over medium heat.
Sauté Shallots and Garlic
Add the minced shallots and crushed garlic to the pot. Cook, stirring occasionally, until softened, about 3-4 minutes.
Add Herbs and Celery Leaves
Add the herb bundle and chopped celery leaves to the pot and stir for about 30 seconds until fragrant.
4Steam the Mussels
5m
Add Wine and Season
Pour in the white wine and bring to a simmer. Season with salt and pepper to taste. Let the wine reduce slightly for about 1 minute.
Add Mussels and Cover
Add the cleaned mussels to the pot. Cover tightly with a lid.
Steam Mussels
Cook for 5-7 minutes, shaking the pot occasionally, until the mussels have opened. Discard any mussels that remain closed.
5Finish the Sauce
2m
Add Cream and Parsley
Remove the herb bundle. Stir in the heavy cream and most of the chopped parsley. Stir gently to combine.
Adjust Seasoning
Taste the sauce and adjust seasoning with salt and pepper if needed.
6Serve
Plate Mussels
Ladle the mussels and the sauce into serving bowls. Garnish with the remaining fresh parsley.
Serve with Fries
Serve immediately with crusty bread or French fries for dipping into the delicious sauce.
Tips
Ensure your mussels are fresh and properly cleaned; discard any that are broken or don't close when tapped.
Don't overcook the mussels, as they can become tough. They are done when they have just opened.
The sauce is key! Use a good quality dry white wine and don't be shy with the butter and cream for richness.
Serve immediately for the best texture and flavor.
