Prep Tomatoes
Grate the tomatoes.
2Cook the Base7m
Sauté Peppers
Heat olive oil and butter in a 23cm (9-inch) skillet over medium heat. Add the chopped green peppers and sauté until browned.
Add Tomatoes
Add the grated tomatoes to the skillet. Cook until the tomatoes are well cooked and shiny.
3Add Cheese and Eggs3m
Season and Add Cheese
Season with salt and red pepper flakes. Add the Turkish feta cheese and cook until it melts, about 30-40 seconds. If the cheese is watery, cook a bit longer.
Add Eggs
Crack the eggs into the skillet. Break them slightly, but do not overmix. Partially cover the skillet, leaving the lid ajar to prevent steaming the eggs.
4Serve
Serve Hot
Serve the menemen hot, traditionally with Turkish breakfast and tea. It's often eaten by dipping bread into the dish.

Tips

Don't overcook the eggs; they should remain slightly runny.
Use ripe tomatoes for the best flavor and texture.
Adjust the amount of red pepper flakes to your spice preference.
