Instructions

1Prepare the Strawberry Syrup5m
Combine Ingredients
Add 200g of fresh strawberries (hulled and halved), 200g cane sugar, and 10g lemon juice to a saucepan.
Simmer
Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture becomes syrupy, about 5-7 minutes. Do not boil.
Strain
Pour the mixture through a fine-mesh sieve into a bowl, pressing gently to extract as much liquid as possible. Discard solids.
Add Freeze-Dried Strawberries
Stir in 10g of freeze-dried strawberries to the strained syrup. This adds a bit more concentrated strawberry flavor and a nice color.
Chill
Let the syrup cool completely, then transfer to an airtight container and chill in the refrigerator until ready to use.
2Prepare the Matcha Base3m
Sift Matcha
Sift 2g of matcha powder into a matcha bowl or a heatproof bowl. This ensures a smooth, clump-free base.
Add Hot Water
Pour 40ml of hot water (around 170°F/77°C) over the matcha powder.
Whisk
Using a bamboo matcha whisk (chasen), whisk the mixture vigorously in a 'W' or 'M' motion until frothy and well combined. Aim for about 20-30 seconds.
Add More Water
Add another 60ml of hot water to the bowl and whisk again briefly to combine.
3Make the Yuzu Soda1m
Fill Glass with Ice
Fill a tall glass with ice cubes.
Add Yuzu Soda
Pour about 150ml of yuzu soda over the ice.
Top with Matcha
Carefully pour the prepared matcha base over the yuzu soda. The layers should remain distinct.
Garnish and Serve
Add a straw and serve immediately. This drink is best enjoyed cold.
4Make the Creamy Matcha2m
Combine Creamy Ingredients
In a cocktail shaker, combine 2 oz heavy cream, 1 oz coconut cream, and 0.75 oz simple syrup.
Froth Mixture
Use a handheld frother or a cocktail shaker to froth the mixture until it's light and foamy. Be careful not to over-froth into butter.
Layer Drink
Pour the prepared matcha base into a glass with ice. Then, carefully spoon the frothed creamy mixture over the top.
Garnish
Lightly dust with ground cinnamon for an aromatic finish.
5Assemble the Strawberry Matcha Latte1m
Add Strawberry Syrup
Add about 30g of the prepared strawberry syrup to a glass.
Add Ice
Fill the glass with ice cubes.
Add Milk
Pour about 100-120ml of your preferred milk (oat milk is recommended for its flavor pairing with matcha) over the ice and syrup.
Add Matcha
Pour the prepared matcha base over the milk and syrup.
Stir and Serve
Stir gently to combine the layers and enjoy. This drink is best served cold.

Tips

For the best matcha flavor, always sift your matcha powder to prevent clumps.
Soaking your bamboo matcha whisk in warm water for a few minutes before use will make it more pliable and help it last longer.
Adjust the sweetness and dilution of the drinks to your personal preference.
For the strawberry syrup, using freeze-dried strawberries adds a concentrated flavor and vibrant color without extra liquid.
When making the creamy matcha, be careful not to over-froth, as you can accidentally turn the cream into butter.
