Instructions

1Prepare the Burger Patties5m
Season the Beef
In a bowl, combine the ground beef with salt, black pepper, and cayenne pepper. Add the chopped green onions. Mix gently until just combined, being careful not to overwork the meat.
Form the Patties
Divide the mixture into four equal portions and form them into patties, about 1/2 inch thick. Make them slightly larger than your serving bowl, as they will shrink during cooking. You can make a slight indentation in the center of each patty to prevent them from puffing up.
2Make the Gravy10m
Combine Gravy Ingredients
In a small bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, ketchup, and sesame oil.
Thicken the Gravy
In a separate small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Pour the broth mixture into a saucepan and bring to a simmer over medium heat. Whisk in the cornstarch slurry and continue to cook, stirring, until the gravy thickens. If using, whisk in the sugar. Reduce heat to low and reserve until needed.
3Cook the Burger Patties10m
Sear the Patties
Heat a cast iron skillet over medium-high heat with a little oil or butter. Sear the burger patties for about 4-5 minutes per side, or until they have a nice deep brown crust and are cooked to your desired doneness. If you added green onions to the patties, you can add them to the pan during the last minute of cooking to lightly char them.
Rest the Patties
Remove the cooked patties from the skillet and let them rest on a plate for a few minutes. Reserve any drippings in the pan for the gravy.
4Make the Gravy (Pan Sauce)5m
Deglaze the Pan
Pour the prepared gravy mixture into the skillet used for the burgers. Scrape up any browned bits from the bottom of the pan with a spoon or spatula. Simmer for a couple of minutes until the sauce is glossy and slightly thickened.
5Fry the Eggs5m
Cook the Eggs
In a separate skillet over medium heat, melt the butter. Crack the eggs into the skillet, being careful not to break the yolks. Season with salt and paprika. Cook until the whites are set and the yolks are still runny, or to your preference.
6Assemble the Loco Moco5m
Plate the Rice
Place a generous portion of hot cooked white rice into each serving bowl.
Add the Patty and Gravy
Top the rice with a burger patty. Spoon a generous amount of the pan sauce over the patty and let it spill onto the rice.
Top with Egg and Garnish
Carefully place a fried egg on top of each burger patty. Garnish with sliced green onions.

Tips

Don't overwork the ground beef when forming the patties, as this can make them tough.
For a richer gravy, use a good quality beef broth and don't be afraid to scrape up all the browned bits from the pan.
Cook the eggs to your preference, but a runny yolk is traditional and adds to the sauce.
The key to a great Loco Moco is the balance of the savory gravy, the juicy patty, and the creamy yolk.
