Pulse Mixture
Pulse until the mixture is finely chopped and blended, scraping down the sides as needed. Be careful not to over-process into a smooth, doughy texture.

Tips

Ensure the oil is at the correct temperature (180°C/355°F) for crispy falafel; too cool and they will be greasy, too hot and they will burn before cooking through.
Do not over-process the falafel mixture; it should be finely chopped but still have some texture, not a smooth paste.
If the mixture is too sticky to shape, lightly oil your hands or shaping tool.
Falafel can be shaped ahead of time and refrigerated for a few hours before frying.
