Cook Onion and Garlic
Place the sliced onion and garlic clove in a small pot with 2-3 tablespoons of light olive oil. Cook over high heat until golden, about 5 minutes.
3Cook the Split Peas
25m
Add Peas and Seasonings
Drain the water from the split peas and add them to the pot with the sautéed onions and garlic. Add salt, dried oregano, and black pepper.
Add Water and Boil
Pour 2-3 cups of hot water over the ingredients in the pot. Bring to a boil, then reduce the heat to medium-low.
Simmer Until Tender
Cook, stirring every few minutes and adding more hot water (about half a cup at a time) as needed, until the split peas are very soft. The mixture should thicken to about 1 cup of remaining liquid.
4Finish the Dip
5m
Puree
Transfer the cooked split pea mixture to a food processor and puree until smooth.
Season
Taste and season with additional salt and black pepper if desired.
Add Lemon Juice
Stir in the fresh lemon juice to combine. Adjust seasoning if needed.
5Serve
Garnish and Serve
Spoon the fava dip into a serving bowl. Garnish with your favorite toppings such as capers, sliced scallions, olives, sundried tomatoes, pine nuts, or fresh parsley. Finish with a drizzle of good quality Greek olive oil. Serve with fresh vegetables and/or warm bread.
Tips
For a smoother dip, you can pass the pureed mixture through a fine-mesh sieve.
If the dip becomes too thick, thin it with a little warm water or olive oil.
This dip can be made ahead and stored in an airtight container in the refrigerator for up to 3 days. It may thicken upon chilling; stir in a little water or olive oil before serving.
