2Make Tzatziki Sauce10m
Prepare Cucumber
Grate the cucumber and squeeze out excess moisture using a fine-mesh sieve or cheesecloth.

Chill Sauce
Cover and refrigerate the tzatziki sauce until ready to serve.

Slice Onion
Thinly slice the red onion.
Chop Tomato
Dice the tomato.
Chop Parsley
Roughly chop the fresh parsley.
4Grill the Chicken15m
Thread Skewers
Thread the marinated chicken pieces onto skewers, about 5-6 pieces per skewer.
Preheat Grill
Preheat your grill or grill pan to medium-high heat.

Warm Pita
Lightly warm the pita bread on a dry skillet or grill until pliable.
Add Tzatziki
Spread a generous layer of tzatziki sauce over the warm pita bread.
Add Chicken
Place a grilled chicken skewer on top of the tzatziki. Remove chicken from skewer and place it onto the pita.
Add Toppings

Tips

For best flavor, marinate the chicken for at least 30 minutes, but avoid marinating for too long (over 4 hours) as the lemon juice can start to 'cook' the chicken.
Ensure your grill or grill pan is hot before adding the chicken to get those nice char marks and prevent sticking.
Don't skip squeezing the moisture out of the cucumber for the tzatziki; this prevents a watery sauce.
Serve immediately for the best texture and flavor.
