Instructions

1Prepare the Tacos5m
Portion Beef
Portion the ground beef into 6 equal portions. Press each portion onto a flour tortilla, spreading it evenly to the edges.
Season Beef
Season the beef generously with the beef seasoning.
2Cook the Tacos10m
Preheat Skillet
Heat a cast iron skillet or flat-top griddle over medium-high heat. Add the oil or beef tallow to help the tortillas crisp and prevent sticking.
Smash and Sear
Place the prepared tacos onto the hot skillet, beef-side down. Press down firmly with a spatula or burger press. Sear for about 2 minutes, or until a deep brown crust forms on the beef.
Add Cheese and Fold
Add a slice of cheese and any desired fillings (like sliced jalapenos or onions) onto the beef. Use a spatula to press down the center of the burger, folding the tortilla over to enclose the fillings, creating a taco shape.
Fry Both Sides
Carefully flip the tacos. Continue to fry each side until golden brown and crispy, about 1-2 minutes per side. Adjust heat as needed to prevent burning.
3Rest and Serve5m
Rest Tacos
Transfer the fried tacos to a wire rack set over a baking sheet to rest. This prevents them from becoming soggy. Continue cooking remaining tacos and keep warm on the rack.

Tips

Use a wire rack to elevate the tacos after frying, preventing them from steaming and staying crispy.
Have all your ingredients prepped and ready before you start cooking, as the tacos cook very quickly.
Flour tortillas work best for this recipe as they are made with fat and crisp up beautifully when fried.
