2Sauté Aromatics and Pork
5m
Heat Oil
Heat cooking oil in a wok or large pot over medium-high heat.
Sauté Garlic and Onion
Sauté the crushed garlic and chopped yellow onion until the onion softens, about 2-3 minutes.
Sear Pork
Add the boiled pork leg to the wok. Sauté for 30 seconds, stirring to coat.
3Simmer the Stew
1h 30m
Add Water and Boil
Pour in the remaining 1 quart of water. Bring to a boil, then cover and reduce heat to a simmer.
Add Spices
Stir in the beef powder, annatto powder, and turmeric powder. Stir well. Cover and simmer until the pork leg is completely tender, about 60-90 minutes. Add more water as needed to keep the pork submerged.
Incorporate Peanut Butter
Stir in the peanut butter until well combined. Simmer for another 5 minutes.
Thicken the Sauce
Prepare the slurry by combining 1 tablespoon of cornstarch with 3 tablespoons of water in a small bowl. Stir the slurry into the simmering stew to thicken the sauce. Season with Maggi Magic Sarap.

Cook Harder Vegetables
Add the sliced Chinese eggplant, cut string beans, and banana blossoms to the stew. Cook for 5 minutes, or until the vegetables are tender-crisp.

Transfer and Serve
Transfer the Kare-Kare to a serving bowl. Serve hot, traditionally with bagoong alamang (shrimp paste) on the side.
Tips
For extra tender pork, you can pressure cook the pork leg for about 30-40 minutes after the initial boil.
Adjust the amount of peanut butter to your preference; some like it richer than others.
Ensure the vegetables are not overcooked; they should retain a slight crispness.
