Instructions

1Sauté Vegetables10m
Heat Oil
Heat olive oil in a pressure cooker over medium heat.
Add Aromatics
Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
Add Root Vegetables
Add chopped carrots and potato to the pot. Stir and cook for 2-3 minutes.
Add Spices and Flour
Stir in cumin, paprika, turmeric, dried mint, salt, and flour. Cook for 1 minute, stirring constantly.
2Cook Lentils15m
Add Lentils and Liquids
Add the rinsed red lentils, chicken stock (if using), and water to the pressure cooker. Stir to combine.
Pressure Cook
Secure the lid of the pressure cooker. Cook on high pressure for 15 minutes. Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
3Blend Soup5m
Blend Until Smooth
Remove the lid and use an immersion blender to blend the soup until smooth and creamy. If the soup is too thick, add a little more hot water or stock until desired consistency is reached.
4Prepare Topping5m
Melt Butter and Oil
In a small saucepan, melt butter with olive oil over medium heat.
Add Pepper Flakes
Once the butter is melted and sizzling, add red pepper flakes. Cook for about 20-30 seconds until fragrant, being careful not to burn.
5Serve2m
Ladle into Bowls
Ladle the hot lentil soup into serving bowls.
Drizzle with Topping
Drizzle the spiced butter and oil mixture over the top of each bowl of soup.

Tips

For a richer flavor, use chicken or vegetable stock instead of water.
Adjust the amount of red pepper flakes to your preferred spice level.
If you don't have a pressure cooker, you can simmer the soup in a regular pot for about 40-50 minutes, or until lentils and vegetables are tender.
