Instructions

1Make the Batter
Combine Ingredients
Add the lukewarm water, warm milk, large eggs, melted unsalted butter, all-purpose flour, and granulated sugar into a blender. Blend on low speed until just combined. Let the batter rest for a few minutes to allow bubbles to subside.
2Cook the Crepes
Heat Skillet
Melt a small amount of butter in a crepe pan or a 10-inch non-stick skillet over medium heat. Using two skillets can speed up the process.
Pour and Swirl Batter
Pour about 1/4 cup of batter into the hot skillet, or enough to thinly coat the bottom. Immediately swirl the skillet to evenly distribute the batter. Add a little more batter if needed to fill any gaps.
Cook First Side
Cook until the edges of the crepe begin to turn golden brown.
Flip and Cook Second Side
Carefully flip the crepe using a thin-edged spatula. Cook for another 30 seconds, or until the second side is golden. Slide the crepe onto a clean cutting board.
Repeat and Stack
Repeat the process with the remaining batter, adding more butter to the skillet as needed between crepes. Once the crepes have cooled to room temperature, they can be stacked.

Tips

Using two skillets simultaneously will significantly speed up the cooking process.
Ensure your skillet is adequately heated before adding the batter for even cooking and easy flipping.
Letting the batter rest for a few minutes helps to reduce bubbles, resulting in a smoother crepe.
