Instructions

1Prepare and Sear the Duck20m
Season Duck Legs
Pat the duck legs dry with paper towels. Season generously on all sides with salt and freshly ground black pepper.
Sear Duck Legs
Heat 2 tbsp duck fat and 1 tbsp olive oil in a heavy-bottomed Dutch oven or large skillet over medium-high heat until shimmering. Place the duck legs skin-side down in the hot fat. Sear for about 5-7 minutes, until the skin is deeply golden brown and crisp. Flip and sear the other side for 1-2 minutes.
Remove Duck
Remove the seared duck legs from the pan and set aside on a plate or baking sheet. Pour off most of the rendered duck fat into a heatproof bowl, reserving about 2 tablespoons in the pan for the sauce.
2Make the Fesenjan Sauce4h
Sauté Onions
Add the diced onion and a pinch of salt to the reserved duck fat in the Dutch oven. Cook over medium heat, stirring occasionally, until the onions are deeply golden brown and caramelized, about 10-15 minutes. Do not rush this step, as it builds a crucial flavor base.
Toast Spices
Add the turmeric, cinnamon, and freshly grated nutmeg to the sautéed onions. Stir and cook for about 1 minute until fragrant, allowing the spices to bloom.
Deglaze and Add Liquids
Pour in the chicken broth and scrape up any browned bits from the bottom of the pot. Add the honey and pomegranate molasses, stirring to combine.
Add Walnuts
Transfer the finely ground toasted walnuts to the sauce. Stir well to incorporate them into the liquid. The sauce will begin to thicken.
Simmer the Duck
Return the seared duck legs to the pot, nestling them into the sauce. Ensure they are mostly submerged. Bring the mixture to a simmer, then reduce the heat to low, cover the pot tightly, and let it cook for 3-4 hours, or until the duck is fork-tender. Stir occasionally and add a splash more broth or water if the sauce becomes too thick.
3Finish the Sauce and Serve10m
Reduce Sauce
Once the duck is tender, carefully remove the duck legs from the pot and set aside. Increase the heat to medium-high and let the sauce simmer uncovered for about 5-10 minutes, or until it has reduced and thickened to your desired consistency. Skim off any excess fat from the surface if needed.
Adjust Seasoning
Taste the sauce and adjust seasoning with salt, honey, or pomegranate molasses as needed to achieve a balance of sweet, sour, and savory flavors.
Serve
Serve the duck fesenjan hot over fluffy Persian rice. Spoon a generous amount of the rich walnut-pomegranate sauce over the duck. Garnish with fresh parsley, chopped toasted walnuts, and fresh pomegranate seeds.

Tips

For a richer flavor, use homemade chicken or duck broth.
Pomegranate molasses can vary in sweetness and tartness; adjust the amount of honey accordingly.
Ensure the onions are deeply caramelized for the best flavor base.
Don't over-process the walnuts; a slightly coarse texture is desirable.
The longer the stew simmers, the more tender the duck will become and the richer the flavors will meld.
