Prepare Kale
Wash the kale thoroughly. Remove the tough stems and chop the leaves. If using pre-chopped kale, rinse well.
Prepare Leeks
Trim the root and dark green tops from the leeks. Slice the white and light green parts thinly. Rinse very well to remove any sand.
Prepare Scallions
Trim the root ends of the scallions. Chop them finely, reserving a small amount for garnish.

Plate Colcannon
Spoon the colcannon into a serving bowl. Make a well in the center.
Garnish
Add a generous knob of butter to the well and garnish with the reserved chopped scallions.

Tips

Ensure potatoes are drained very well to avoid watery colcannon.
Using room temperature butter and cream/milk will help create a smoother, creamier texture.
Don't over-mash the potatoes; a slightly rustic texture is desirable.
The color of the colcannon will depend on the type of greens used; kale provides a vibrant green.
