Lime Juice
2 drops
Instructions
1Prepare the Eggs
Separate Eggs
Carefully separate the egg yolks from the egg whites.
Whip Egg Whites
Whisk the egg whites until stiff peaks form. Season with salt and add the lime juice (or cream of tartar) to help stabilize the whites.
Fold in Add-ins
Gently fold the chopped fresh parsley and grated Parmesan cheese into the whipped egg whites.
2Bake the Cloud Eggs
Form Clouds
Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper. Spoon the egg white mixture onto the parchment paper, forming two distinct "clouds" with a slight indentation in the center of each.
First Bake
Bake the egg white clouds for 3 minutes.
Add Yolks and Second Bake
Carefully place one egg yolk into the indentation of each egg white cloud. Return the tray to the oven and bake for an additional 3 minutes, or until the egg whites are lightly golden and the yolks are still runny.
3Serve
Garnish
Garnish the cloud eggs with a sprinkle of extra Parmesan cheese and fresh parsley.
Tips
Ensure your bowl and whisk are completely clean and dry before whipping egg whites for best volume.
Do not overmix when folding in the cheese and parsley, as this can deflate the egg whites.
The goal is to have the egg whites cooked through and lightly golden, while the yolks remain runny.
