Instructions
1Prepare the Chicken
5m
Cut Chicken
Cut the chicken breasts into bite-sized pieces.
Season Chicken
Season the chicken pieces with salt, pepper, chili powder, garlic powder, onion powder, paprika, and oregano. Mix well to coat evenly.
2Cook the Chicken
8m
Heat Pan
Heat a tablespoon of olive oil and a tablespoon of butter in a skillet over medium-high heat.
Cook Chicken
Add the seasoned chicken to the hot skillet and cook for about 7-8 minutes, or until cooked through and lightly browned. Stir occasionally.
Rest Chicken
Remove the chicken from the skillet and place it on a plate to cool slightly.
3Assemble the Quesadillas
5m
Prepare Tortillas
Lightly brush one side of each flour tortilla with olive oil.
Add Cheese
Sprinkle a generous amount of shredded Monterey Jack cheese over the oiled side of half of the tortillas.
Add Chicken
Top the cheese with a portion of the cooked chicken.
Add More Cheese
Add another layer of cheese over the chicken. This helps bind the quesadilla.
Fold Tortillas
Fold the other half of the tortilla over the filling to create a half-moon shape. Press gently.
4Grill the Quesadillas
5m
Heat Grill Pan
Heat a grill pan over medium heat.
Cook Quesadillas
Place the folded quesadillas onto the hot grill pan. Cook for 2-3 minutes per side, or until golden brown and the cheese is melted and gooey. Press down gently with a spatula.
Cut and Serve
Remove the quesadillas from the grill pan, cut them into wedges, and serve immediately with pico de gallo.
Tips
For extra flavor, you can add a pinch of cumin or smoked paprika to the chicken seasoning.
Don't overfill the quesadillas, or they will be difficult to fold and cook evenly.
Ensure your grill pan is hot before adding the quesadillas for nice grill marks and a crispy exterior.
