Instructions

1Prepare Seasoning and Chicken5m
Mix Seasoning
In a small bowl, combine chili powder, ground cumin, garlic powder, paprika, oregano, kosher salt, and black pepper. Stir to combine.
Season Chicken
Generously sprinkle the fajita seasoning over both sides of the chicken breasts. Use your fingers to press the seasoning into the chicken.
2Cook Chicken and Vegetables15m
Sear Chicken
Heat olive oil in a large skillet (preferably cast iron) over medium-high heat. Sear the chicken breasts for about 7 to 8 minutes per side, until cooked through and nicely browned.
Rest and Slice Chicken
Remove the chicken from the skillet and place it on a cutting board. Let it rest for a few minutes. While the chicken rests, thinly slice the onion and bell peppers.
Sauté Vegetables
Add the sliced onions and bell peppers to the same skillet. Sauté for 4 to 5 minutes, stirring frequently, until they are tender-crisp and slightly caramelized.
Slice Chicken
Slice the rested chicken breasts into strips. If the strips are too thick, you can slice them in half lengthwise.
3Combine and Serve5m
Combine Ingredients
Add the sliced chicken back into the skillet with the vegetables. Squeeze fresh lime juice over everything and stir to combine.
Serve
Serve the chicken fajitas immediately with warm tortillas and your favorite toppings such as sour cream, pico de gallo, and avocado.

Tips

For an even juicier chicken, consider using chicken thighs instead of breasts.
Make a double batch of the fajita seasoning to keep on hand for future meals.
Leftover fajitas can be stored in the refrigerator for 4-5 days and reheated for a quick meal.
