Instructions

1Marinate the Chicken2h
Combine Marinade Ingredients
In a large bowl, combine the chicken pieces, plain yogurt, ginger-garlic paste, biryani masala, tomato paste, crushed tomatoes, chopped cilantro, chopped mint, green chili, lime juice, and salt. Mix well to ensure all chicken pieces are evenly coated.
Marinate
Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
2Prepare the Rice20m
Rinse Rice
Rinse the basmati rice under cold running water until the water runs clear. This removes excess starch.
Soak Rice
Soak the rinsed rice in plenty of water for at least 30 minutes. Drain well before cooking.
Boil Rice
In a large pot, bring 4 cups of water to a rolling boil. Add 1 tbsp salt and the whole spices (bay leaves, cinnamon stick, cardamom pods, star anise, black peppercorns). Add the drained basmati rice and cook for about 5-7 minutes, until the rice is about 70% cooked. It should still have a slight bite.
Drain Rice
Carefully drain the rice in a colander, removing the whole spices if desired. Set aside.
3Fry the Onions20m
Slice Onions
Thinly slice the red onions. They can be sliced into rings or half-rings.
Fry Onions
Heat 2 cups of vegetable oil in a deep pan or wok over medium-high heat. Add the sliced onions and fry, stirring occasionally, until they are golden brown and crispy. This will take about 10-15 minutes. Be careful not to burn them.
Drain Onions
Using a slotted spoon, remove the fried onions from the oil and drain them on paper towels. Reserve the flavorful oil for later.
4Layer the Biryani10m
Prepare Cooking Pot
In a large, heavy-bottomed pot or a slow cooker insert, spread a thin layer of the reserved fried onion oil (or ghee) at the bottom. This prevents the rice from sticking.
First Rice Layer
Spread half of the partially cooked basmati rice evenly over the bottom of the pot. Sprinkle with some fried onions and a pinch of saffron threads soaked in rose water (if using).
Chicken Layer
Arrange the marinated chicken pieces and any accumulated marinade evenly over the rice layer. Add the fried potatoes if using.
Second Rice Layer
Top the chicken with the remaining half of the basmati rice. Sprinkle with the remaining fried onions, saffron-infused rose water, and a few drops of food coloring (if using) for visual appeal.
Add Liquid
Drizzle the reserved flavored oil from frying the onions over the top layer of rice. Add about 1/4 cup of water or broth to help steam the rice.
5Cook the Biryani1h 30m
Seal the Pot
Cover the pot tightly with aluminum foil, then place the lid on top. This traps the steam and cooks the rice and chicken evenly.
Slow Cook
Cook on low heat (or in a slow cooker on low setting) for about 60-90 minutes, or until the chicken is cooked through and the rice is tender and fluffy. The exact time may vary depending on your stove and pot.
Rest
Once cooked, let the biryani rest, covered, for about 10-15 minutes off the heat. This allows the flavors to settle and the rice grains to separate.

Fluff and Serve
Gently fluff the biryani with a fork, mixing the layers slightly. Serve hot, garnished with extra fried onions and fresh cilantro, if desired.

Tips

For best results, marinate the chicken overnight for deeper flavor penetration.
Ensure the onions are fried until truly crispy; they will soften slightly when layered in the biryani.
Do not overcook the rice in the initial boiling stage, as it will continue to cook during the steaming process.
Adjust the green chilies according to your spice preference.
