Instructions
1Prepare the Soup Base
15m
Sauté Aromatics
Heat olive oil in a large Dutch oven over medium heat. Add chopped onion and leek and cook until tender but not browned, about 5 minutes. Add chopped tomatoes and garlic and cook for another 5 minutes.
Add Liquid and Seasonings
Pour in 3.5 pints of water. Add parsley sprigs, bay leaf, dried thyme, fennel seeds, and saffron threads. Season with salt and pepper.
Simmer
Bring to a boil, then reduce heat to a moderate simmer. Cook uncovered for 30-40 minutes.
2Prepare the Fish
20m
Prepare Fish Heads
Remove the gills from the fish heads. Cut off fins and any other unwanted parts. Discard the gills and guts.
Prepare Fish Frames
Cut the fish frames into smaller pieces. Remove fins.
Cut Fillets
Cut the fish fillets into bite-sized pieces or strips.
3Cook the Fish and Shellfish
20m
Add Fish to Soup
Add the fish heads and frames to the simmering soup. Cook for 5 minutes.
Add Other Seafood
Add the mussels, scallops, and fish fillets to the pot. Cook for about 5 minutes, or until the mussels open and the fish is cooked through.
Discard Unopened Mussels
Remove any mussels that did not open.
4Prepare Croutons
15m
Slice Baguette
Slice the baguette into 3/4-inch thick slices.
Brush with Oil
Arrange slices on a baking sheet and brush with olive oil.
Bake Croutons
Bake at 425°F (220°C) for 10-15 minutes, flipping halfway through, until golden brown and crisp.
5Prepare Potatoes
20m
Boil Potatoes
Peel and dice potatoes into cubes. Boil in salted water for 15-20 minutes, or until tender.
6Strain and Serve
10m
Strain the Soup
Carefully strain the soup through a fine-mesh sieve into a clean bowl, discarding the solids.
Skim Fat
Skim any excess fat from the surface of the strained broth.
Assemble Bowls
Ladle the broth into bowls. Add a selection of the cooked fish, mussels, scallops, potatoes, and croutons to each bowl.
Garnish
Garnish with chopped fresh parsley.
Tips
Use a variety of fish for the best flavor and texture in your bouillabaisse.
Don't overcook the seafood; it should be just cooked through and tender.
Serve immediately with the croutons and rouille (optional) on the side.
