Instructions
1Sear the Beef
5m
Heat pan and oil
Place a large deep pan or Dutch oven over medium-high heat. Add 2 Tbsp olive oil and once the oil is very hot, add the thinly sliced beef strips in a single layer.
Sear beef
Cook for 1 minute per side without stirring, until just browned and no longer red. Sear beef in 2 batches to avoid overcrowding the pan. Remove beef to a plate and cover to keep warm.
2Sauté Aromatics and Mushrooms
10m
Cook onions and mushrooms
Add 2 Tbsp butter, the chopped onion, and sliced mushrooms to the same pan. Sauté for 6-8 minutes, or until the liquid has evaporated and the onions and mushrooms are soft and lightly browned.
Add garlic and flour
Add 1 minced garlic clove and sauté for 1 minute until fragrant. Stir in 1 Tbsp all-purpose flour and sauté for another minute, stirring constantly.
3Make the Creamy Sauce
5m
Add broth and cream
Pour in 1 cup of beef broth, scraping any bits from the bottom of the pan. Add 3/4 cup heavy whipping cream and simmer for 1 to 2 minutes, or until slightly thickened.
Temper and add sour cream
Stir a few tablespoons of the sauce into 1/4 cup of sour cream to temper it, preventing curdling. Then, add the tempered sour cream to the pan while stirring constantly.
Add seasonings and beef
Stir in 1 Tbsp Worcestershire sauce, 1/2 tsp Dijon mustard, and season with 1/2 tsp salt and 1/4 tsp pepper, or to taste. Continue simmering until the sauce is creamy. Add the seared beef with any accumulated juices back to the pan and bring just to a simmer, or until the beef is heated through.
4Serve
Garnish and serve
Serve the beef stroganoff over cooked egg noodles, if desired. Garnish with chopped green onion or parsley.
Tips
For the most tender beef, slice it thinly against the grain and ensure it's well-chilled before cutting.
Don't overcrowd the pan when searing the beef; cook it in batches to achieve a good brown crust.
Tempering the sour cream by mixing it with a little warm sauce before adding it to the pan prevents it from curdling.
