Instructions
1Prepare Rice and Spices
30m
Wash and Soak Rice
Wash the basmati rice thoroughly and soak it in water for at least 30 minutes, or longer if possible.
Soak Spices
Combine all the whole spices (cardamom, cloves, star anise, cinnamon sticks, cumin seeds, black peppercorns) in a bowl. Add enough water to cover them and soak for at least 30 minutes.
2Cook the Beef
45m
Sear Beef
In a Dutch oven, heat cooking oil over medium-high heat. Add the cubed beef and sear on all sides until browned. Add garlic and ginger paste and salt to taste. Stir well.
Simmer Beef
Add 1 and 1/2 cups of water (or enough to cover the meat). Bring to a boil, then reduce heat, cover, and simmer for about 30-40 minutes, or until the beef is tender. Ensure there is some soup remaining.
3Sauté Onions and Spices
15m
Brown Onions
In the same pot (or a separate one if preferred), heat 1/2 cup of cooking oil. Add the sliced onions and cook until golden brown, stirring occasionally.
Add Aromatics
Add 1 tablespoon of garlic and ginger paste to the browned onions and cook for 1 minute until fragrant.
Cook Spices
Drain the soaked spices and add them to the pot with the onions and aromatics. Cook for about 3-4 minutes, stirring constantly, until fragrant. The cooking time of spices affects the final color of the pilau.
4Combine and Cook Pilau
45m
Add Beef and Rice
Add the cooked beef (with its remaining soup) to the pot with the sautéed onions and spices. Drain the soaked rice and add it to the pot. Stir gently to combine.
Add Water and Cook
Add 1 and 1/2 cups of water (or 3 cups total liquid including the beef soup). Stir to ensure the rice is evenly distributed. If the mixture seems sticky, add a drop of water.
Simmer Pilau
Cover the pot tightly and cook on low heat for about 15-20 minutes, or until the rice is cooked and the water is absorbed. Avoid stirring too much during this stage.
Rest and Fluff
Once the rice is cooked, turn off the heat and let it rest, covered, for about 10-15 minutes. Then, gently fluff the pilau with a fork or spatula to separate the grains.

Plate and Garnish
Serve the beef pilau hot. Garnish with a banana, tomato relish, or a side salad if desired.
Tips
For a darker pilau, cook the onions and spices a bit longer until they are deeply browned.
Ensure the rice is properly soaked to achieve fluffy, separate grains.
Avoid stirring the pilau too much once it starts steaming to prevent the rice from breaking.
