Combine Ingredients
In a small bowl, mix tamari (1 tsp), soy sauce (1 tbsp), and oyster sauce (1 tbsp). Set aside.
2Cook the Beef2m
Add Oil to Beef
Add 1 tbsp of cooking oil to the marinated beef to help seal in the juices.
Heat Wok
Heat the wok over high heat for about 1.5 minutes. Add 3 tbsp of cooking oil and heat for 30 seconds until it starts to ripple.
Sear Beef
Add the beef to the hot wok and cook for 40 to 60 seconds on high heat. It's okay if it's still a little red.
Remove Beef
Remove the beef from the wok and set aside. Strain excess oil if desired.
3Stir Fry Noodles and Vegetables7m
Wipe Wok
Wipe down the wok to remove any residue from cooking the beef.
Sauté Aromatics
Add a small amount of oil to the wok. Add the yellow onion and the white parts of the scallions and fry for 20 to 30 seconds until fragrant.
Add Noodles
Add the fresh rice noodles (1 lb) to the wok. Stir gently to loosen them up, being careful not to break them. Cook for 2 minutes or until golden brown and fragrant.
Add Sauce
Pour the prepared chow fun sauce over the noodles and cook for 1 minute, stirring to coat evenly. Add more dark soy sauce if a darker color is desired.
Add Greens and Sprouts
Add the green parts of the scallions and the bean sprouts to the wok. Cook for 30 to 45 seconds.
4Combine and Finish2m
Add Beef Back
Return the cooked beef to the wok. Mix everything together and cook for 1 more minute.
Add Sesame Oil
Turn off the heat. Stir in the sesame oil (1 tsp).
Taste and Serve
Taste the dish and adjust seasonings as needed. Plate and serve immediately.

Tips

If fresh rice noodles are difficult to separate, a quick microwave for about a minute can help loosen them before stir-frying.
Don't overcrowd the wok when cooking the beef; cook in batches if necessary to ensure a good sear.
Be gentle when stirring the rice noodles to prevent them from breaking apart.
