Instructions

1Prepare the Rice10m
Season Rice
In a large bowl, combine the cooked rice with salt and sesame oil. Mix well using a rice paddle or spatula until evenly seasoned. Let it cool slightly.
2Prepare the Fillings30m
Marinate Beef
Slice the skirt steak thinly against the grain. In a bowl, combine the beef with minced garlic, soy sauce, sugar, and black pepper. Mix well and let it marinate for at least 15 minutes.
Cook Beef
Heat a non-stick pan over medium-high heat with a little cooking oil. Add the marinated beef and stir-fry until cooked through and slightly caramelized. Set aside.
Prepare Carrots
Julienne the carrots. Sprinkle with a pinch of salt and mix. Let them sit for a few minutes to soften slightly, then squeeze out any excess water.
Blanch Spinach
Boil water in a pot. Add the spinach and blanch for 30 seconds to 1 minute, until wilted. Immediately transfer to an ice bath to stop the cooking. Squeeze out excess water thoroughly. Season with minced garlic, salt, and sesame oil. Mix well.
Prepare Egg Crepe
In a bowl, whisk the eggs with salt. Heat a lightly oiled non-stick pan over low heat. Pour in the egg mixture and cook until set, forming a thin crepe. Remove from pan, let cool, then slice into thin strips.
Prepare Pickled Radish
Cut the yellow pickled radish (danmuji) into strips if they are not already. If desired, use a small cookie cutter to create decorative shapes like flowers.
3Assemble the Gimbap15m
Lay out Seaweed
Place a sheet of roasted seaweed (gim) shiny side down on a bamboo rolling mat. Ensure the rough side is facing up.
Spread Rice
Take about 2/3 cup of seasoned rice and spread it evenly over the seaweed, leaving about a 2-inch border at the top edge. Spread the rice thinly and evenly, using your fingers or a rice paddle.
Add Fillings
Arrange the prepared fillings horizontally across the rice, about one-third of the way up from the bottom edge. Layer the cooked beef, julienned carrots, egg strips, blanched spinach, and pickled radish strips.
Roll the Gimbap
Using the bamboo mat, lift the bottom edge of the seaweed and roll it tightly over the fillings, tucking the edge in. Continue rolling, applying gentle pressure to form a compact cylinder. Seal the top edge with a little water if needed.
Repeat
Repeat the process with the remaining seaweed sheets, rice, and fillings to make more gimbap rolls.
4Slice and Serve5m
Slice Gimbap
Wet a sharp knife with water or sesame oil to prevent sticking. Slice the gimbap rolls into bite-sized pieces, about 1 inch thick. Wipe the knife clean between cuts if necessary.
Garnish and Serve
Arrange the sliced gimbap on a serving plate. Optionally, brush lightly with sesame oil and sprinkle with sesame seeds for extra flavor and shine. Serve immediately.

Tips

Ensure the spinach is squeezed very dry to prevent the gimbap from becoming soggy.
Don't overfill the gimbap rolls, or they will be difficult to roll and may fall apart.
If you don't have a bamboo mat, you can carefully roll the gimbap by hand, using plastic wrap to help shape it.
For a cleaner cut, use a very sharp knife and wipe it with a damp cloth or brush with sesame oil between slices.
