Boil Potatoes
Boil 2 medium potatoes until they are very soft. Drain and peel them once cooled slightly.
Mash and Season
Mash the boiled potatoes and add 1/2 tsp turmeric powder, 1 tsp crushed red chilli, 1 tbsp finely chopped onion, 1 chopped green chilli, 1 tbsp chopped coriander leaves, and 1 tbsp mustard oil. Mix everything thoroughly to form a soft dough-like consistency.

25m
Add Filling to Batter
Add the prepared potato mixture and 1 tbsp chopped coriander leaves to the batter. Pour in 1 tbsp mustard oil.
Mix to a Smooth Batter
Whisk all ingredients together until a smooth, lump-free batter is formed. The consistency should be pourable but thick enough to coat the back of a spoon.
Heat the Pan
Heat a non-stick pan over medium heat. Grease the pan if required.
Pour and Spread Batter
Pour a ladleful of batter onto the hot pan and spread it gently to form a round paratha.
Cook First Side
Cook for 2-3 minutes until the moisture is absorbed and the edges start to look dry. You can gently press the sides with a cloth.
Flip and Cook Second Side
Flip the paratha and cook the other side for another 2-3 minutes. Gently press both sides with a cloth to ensure even cooking and a golden-brown color.
Brush with Butter/Ghee
Brush the cooked paratha with melted butter or ghee on both sides.
Serve Hot
Serve the Aloo Paratha hot with yogurt, pickle, or your favorite accompaniment.
Tips
Ensure the potatoes are boiled until very soft for a smooth filling.
Adjust the spice level by adding more or less green chilli and red chilli flakes.
Do not overmix the batter once the potato filling is added, just enough to combine.
Cook on medium heat to ensure the paratha cooks through without burning.
