Instructions

1Prepare the Sauce Base10m
Sauté aromatics
Heat vegetable oil in a saucepan over medium heat. Add chopped red onion and garlic cloves. Sauté until softened and translucent, about 5-7 minutes, stirring occasionally.
Add Aji Amarillo
Add the aji amarillo paste to the saucepan. Stir well and cook for another 2-3 minutes until fragrant.
Cool the base
Remove the saucepan from heat and let the mixture cool completely. This is crucial for blending.
2Blend the Sauce5m
Combine ingredients in blender
Transfer the cooled sauce base to a blender. Add the saltine crackers, queso fresco, evaporated milk, and salt to taste.
Blend until smooth
Blend on high speed until the sauce is completely smooth and creamy. If the sauce is too thick, add a little more evaporated milk or water, one tablespoon at a time, until desired consistency is reached.
3Prepare the Potatoes and Eggs5m
Slice potatoes
Peel the boiled potatoes (purple and yellow if available) and slice them into rounds or halves, depending on size.
Slice eggs
Peel the hard-boiled eggs and slice them into halves or quarters.
4Assemble the Dish5m
Arrange lettuce
Place lettuce leaves at the bottom of a serving plate or bowl.
Add potatoes and eggs
Arrange the sliced potatoes (both colors) and egg slices over the lettuce.
Sauce and garnish
Generously drizzle the huancaina sauce over the potatoes and eggs. Garnish with black olives, sliced aji amarillo strips, and parsley sprigs if desired.

Tips

Ensure the sauce base is completely cool before blending to prevent steam buildup in the blender.
Adjust the amount of crackers to achieve your desired sauce thickness.
For a spicier sauce, use more aji amarillo paste or add a fresh chili pepper to the blend.
Huancaina sauce can be made ahead and stored in the refrigerator for up to 3 days. Reheat gently or serve at room temperature.
