Instructions

1Make the Dough10m
Combine Dry Ingredients
In a large bowl, combine the flour and salt. Mix well.
Add Water
Gradually add the water while mixing until a shaggy dough forms.
Knead the Dough
Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.
Rest the Dough
Cover the dough with a damp cloth or plastic wrap and let it rest for at least 20 minutes.
2Prepare the Fillings15m
Pork Filling
In a bowl, combine ground pork, chopped green onions, minced ginger, minced garlic, soy sauce, and sesame oil. Mix thoroughly until well combined.
Vegetable Filling
In a separate bowl, combine shredded cabbage, shredded carrot, chopped green onions, minced ginger, minced garlic, soy sauce, and sesame oil. Mix well.
Shrimp Filling
In a third bowl, combine chopped shrimp, chopped green onions, minced ginger, minced garlic, soy sauce, and sesame oil. Mix until just combined.
3Assemble the Dumplings10m
Divide Dough
Divide the rested dough into small, equal portions. Roll each portion into a thin circle (about 3-4 inches in diameter).
Fill Dumplings
Place a spoonful of your chosen filling in the center of each wrapper. Fold the wrapper in half and pleat the edges to seal, or use your preferred dumpling folding method.
Arrange Dumplings
Place the formed dumplings on a lightly floured surface or parchment paper, ensuring they don't touch each other.
4Cook the Dumplings7m
Heat Pan
Heat a tablespoon of neutral oil in a non-stick skillet over medium-high heat.
Sear Dumplings
Arrange the dumplings in a single layer in the hot skillet. Cook for 2-3 minutes until the bottoms are golden brown.
Steam Dumplings
Carefully add about 1/4 cup of water to the skillet (it will steam). Immediately cover with a lid and reduce heat to medium-low. Steam for 4-5 minutes, or until the wrappers are translucent and the filling is cooked through.
Serve
Remove the lid and let any remaining water evaporate. Serve the dumplings immediately with a dipping sauce made from soy sauce and rice vinegar, with optional chili oil.

Tips

Ensure your dough is well-rested; this makes it easier to roll thin without tearing.
Don't overfill the dumplings, as this can make them difficult to seal and prone to bursting during cooking.
For crispier bottoms, ensure the pan is hot before adding the dumplings and don't overcrowd the pan.
